Cinnamon Sweet Potatoes


I learned something new today!  My husband likes sweet potatoes...  You'd think you know someone after 18 years.  He read an article in Men's Health that it was good for men and he's on a health kick.  I guess I will be making them more often.  I'm so happy my daughter liked them as well!  This is a perfect side for any meal.

Cooking Time:  30-40 minutes
Prep Time:  15 minutes
Yield:  4 servings

Ingredients
2 sweet potatoes, peel and slice into 1/2 inch slices
2 tablespoons canola oil
2 tablespoons butter, melted
Salt and Pepper, to taste
1/2 tablespoons brown sugar
1 teaspoon ground cinnamon

Directions

Preheat oven to 400°F.

Place all ingredients in bowl and mix well.  I find it best to use my hands since you want to make sure the sweet potato slices are all covered well.

Place a piece of parchment paper on baking sheet.  If you don’t have it, you can use cooking spray on the baking sheet itself.  Arrange the sweet potatoes on the baking sheet.  Bake for 15 minutes.  Remove sweet potatoes from oven and gently flip them over.  Continue baking for another 10-12 minutes or until browned and soft at center.
