Peach Salsa

You may be asking why someone would go through the trouble of making salsa when you can pick some up at the supermarket.  Trust me, it is so worth the few minutes it will take to prepare it this incredible Peach Salsa.  Imagine a fun snack with no guilt!  I love it!  Serve it with chips, put it over fish or chicken.  I even put it over white rice yesterday.  Another tip and probably my favorite...  Add mango to the Peach Salsa or use mango to make mango salsa. Say goodbye to store bought salsas forever!

Ingredients
8 Plum tomatoes, chopped
1 peach, peeled and chopped (or 1 mango* - or use both. Double Yum!)
1 small red onion, minced
2 tablespoons cilantro, minced
2 limes, juice of fresh limes
1 tablespoon Sweet Chili Sauce
Salt and Pepper, to taste

Directions
Combine all ingredients in a bowl.  Refrigerate 2 to 4 hours before serving for best results.  Serve with chips or over fish or chicken.  It's that easy!

* I like to use the Kent or Keitt mangoes.  You won't get those annoying fibers.
