Anytime Home Fries Recipe

At least once a month my daughter and I like to switch things up a bit and do breakfast for dinner. We’ll make some eggs, pancakes and these “Anytime” Home Fries. It’s fun, different, and I usually don’t have to ask twice for help in the kitchen. You can also serve these as a side dish for dinner. Whatever you do, make enough for seconds. They always disappear!

Prep time: 15 minutes
Cooking time: 20-30 minutes
Yield: 6-8 servings

Ingredients

2 pounds red potatoes, cut into 3/4″ pieces (do not peel potatoes)
1 large onion, rough chopped
3 tablespoons olive oil
2 tablespoon butter
1/2 teaspoon paprika
Salt and black pepper, to taste

Directions

In a large non-stick pan, saute the onions in the oil and butter until soft over medium-high heat. Lower heat to medium and add potatoes, salt, pepper, and paprika. Stir to combine ingredients. Allow potatoes to cook for several minutes before gently mixing again. The onions will begin to caramelize and get crispy. Keep mixing gently every few minutes so the potatoes cook evenly and until they are soft when pierced with a fork. Serve immediately.
